Calçotada Experience

The calçot is a variety of spring onion that forms the basis of one of the typical dishes of Catalan gastronomy: the calçotada.

One of the most accepted versions tells us that at the end of the 19th century, a peasant's carelessness with embers caused all his onions to burn. Instead of throwing them away, he began to peel off layers, only to discover that inside they were very tender and creamy.
